Pumpkin Spice Oatmeal Cookies

I LOVE Fall! I am obsessed with anything Pumpkin Spice. Coffee. Cake. Cookies. Pie. Pancakes. I have been searching Pinterest daily for Pumpkin related recipes, and had the chance two nights ago to make Pumpkin Spice Oatmeal Cookies.

Not only are they low fat, but they are chewy and delicious. They taste like pumpkin pie in a cookie! Luca had 4 the first day I made them! Even Marco said, “Wow these ARE really good” as if he assumed they wouldn’t be! He isn’t a huge fan of my obsession with Fall…but that’s another story.

They are super easy to make, and so so delicious!

Due to the huge amount of oatmeal in them I also deemed them a “breakfast cookie” and had two with my coffee yesterday morning! It was awesome! :)

Pumpkin Spice Oatmeal Cookies

1 cup flour

2 cups oatmeal

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 tsp cinnamon

2 tsp pumpkin spice

2 tbsp butter, room temperature

1/2 cup sugar

1/2 cup brown sugar

1 large egg

6 tbsp canned pumpkin

2 tsp vanilla

optional – 3/4 cup chopped pecans

 

Preheat oven to 350F.

Whisk oats, flour, baking powder, baking soda, salt,  pumpkin spice and cinnamon into medium sized bowl. Set aside.

In small bowl cream butter and sugars together. Add the egg. Followed by the pumpkin and vanilla. Stir until smooth.

Add pumpkin mixture to flour mixture and mix well.

Stir in pecans if using.

Drop 1 tbsp of dough onto cookie sheet.

Bake 10-12 minutes.
