Carmel Corn

I knew I would have to get on the Christmas recipe posts sooner or later! :) This will be the first of many over the next couple weeks as I make some of our traditional Christmas goodies and try out some new ones (all found on Pinterest of course….oh and an amazing one I can’t wait to try from Hidden Ponies!)

Carmel corn is Marco’s favourite. So much so I am worried between the two of us all 16 cups of popcorn will disappear tonight….(insert guilty smile here!) oh well, it’s Christmas right?!?! haha that reminds me of this pin I saw on Pinterest this morning…

On that note….here’s the recipe for Carmel Corn. Thanks Mom for the recipe! :)

Carmel Corn

16 cups popped popcorn

1 cup packed brown sugar

1/2 cup butter

1/4 cup light corn syrup

1 tsp salt

1/2 tsp baking soda

Heat oven to 200F. Divide popped corn between 2 ungreased rectangle 9×13 pans.

Heat brown sugar, butter, corn syrup and salt over medium heat, stirring occasionally until melted and bubbling slightly.

Cook over medium heat for 5 minutes. Remove from heat.

Stir in baking soda until foamy. Pour over popped corn, stirring until corn is well coated.  Bake 1 hour, stirring every 15 minutes.

EAT! :)
