Homemade Granola Bars

These are amazing! I am so glad I found this recipe!

I have been looking forever for a recipe for chewy granola bars that were good, relatively healthy, and easy to make. It took forever! I tried a few and they just weren’t what I was looking for! I wish I could remember where I found this recipe so I could credit whoever shared it! It’s so good! Luca has meltdowns when “Mommy’s Granola Bars” (what he calls them) are all gone! I made a pan last night and they are already almost a quarter gone!

Granola Bars

4 cups oats

1/4 cup flour

1/2 cup shredded unsweetened coconut

1/3 cup brown sugar

3/4 cup chocolate chips

1/2 cup dried cranberries

1/2 tsp kosher salt

1/2 cup canola oil

1 tsp vanilla

3/4 cup honey

 

Preheat oven to 325F.

Combine first 6 ingredients in bowl.

In seperate bowl mix remaining ingredients….you have to whisk it a bit as the oil has a hard time mixing with the honey.

Pour wet mix over dry mix and combine well.

Place into 9×13 casserole dish (I used my Corningware) and push down with spatula.

Bake 35 minutes.

Let sit for few hours before cutting….I cut mine too soon last time and they didn’t set….made for very crumbly bars!

Cut into approx 30 bars. (They are 130 calories each)
